Pesto Goat Cheese Sandwich

2 Tbs Pesto
2 Tbs Goat Cheese
4 Slices Gala Apple

Slice the bread, we used some nice rolls from Il Fornaio, then wipe them down with pesto. Of course, homemade pesto is the best, but Trader Joe's packaged pesto worked fine for us. Next, slather on the goat cheese, how much really depends on your own taste. Top it off with some thinly sliced apple. We happened to have some leftover chopped walnuts, which we sprinkled on top, et viola:
